Chicken and Cucumber Salad with Teriyaki Peanut Sauce and Skinny Noodles

A light, refreshing, and flavorful salad made with Skinny Noodles, perfect for a healthy and satisfying meal.

Ingredients:

  • 300g chicken breast
  • 2-3 cucumbers, thinly sliced or julienned
  • 1 pack of Skinny Noodles
  • 2 tbsp Soy Sauce
  • 3 tbsp Teriyaki Sauce 
  • 1 tbsp rice vinegar
  • 3 tbsp natural peanut butter
  • 1 tsp sesame oil
  • 1-2 garlic cloves, minced
  • 1 tbsp Skinny Pasta sugar substitute
  • 1 tbsp crushed peanuts
  • 1 tsp toasted sesame seeds
  • 1-2 green onions, finely sliced
  • Fresh cilantro or mint leaves (optional)
  • Chili flakes or fresh sliced chili (optional, for spice)

Instructions:

  1. Prepare the Noodles:
    Drain the Skinny Noodles well and rinse with water. Leave them in a strainer. Optionally, microwave for 3 minutes and cool completely.

  2. Prepare the Cucumbers:
    Use a peeler to create thin strips of cucumber. Place in a large bowl.

  3. Cook the Chicken:
    Boil water in a pot with a pinch of coarse salt. Reduce to medium-low heat and poach the chicken for about 10 minutes, or until fully cooked. Let cool completely. Once cooled, shred the chicken into thin strips using a fork or your hands (you can also cut it into small cubes).

  4. Make the Sauce:
    In a small bowl, whisk together Soy Sauce, rice vinegar, sesame oil, peanut butter, minced garlic, and the Skinny Pasta sugar substitute until smooth. Taste and adjust seasoning if needed by adding more sweetener, soy sauce, or sesame oil.

  5. Assemble the Salad:
    Add the prepared Skinny Noodles and shredded chicken to the cucumber strips. Pour the sauce over the mixture and toss everything together until well coated.

  6. Garnish and Serve:
    Sprinkle with toasted sesame seeds, crushed peanuts, green onion, and optionally, fresh cilantro or mint leaves. Add chili flakes for a spicy kick if desired.

    Serve immediately to preserve the crunchiness of the cucumbers (note: cucumbers may release water over time).
