Teriyaki Tofu Pad Thai – Delicious, Nutritious, and Easy to Make!

Ingredients:

  • 200g tofu, cut into cubes
  • 1 pack of Skinny Pasta Fettuccine
  • 2 beaten eggs
  • 1 carrot, julienned
  • 1 cup of bean sprouts
  • 1 green onion, chopped
  • 1-2 garlic cloves, minced
  • 3 tbsp soy sauce 
  • 3 tbsp teriyaki sauce 
  • 1 tbsp sugar-free chili sauce
  • 1 tbsp sesame oil
  • A handful of fresh cilantro
  • A handful of cashews
  • Fresh ginger root

Instructions:

  1. Prepare the Skinny Pasta Fettuccine: Drain and rinse thoroughly with water. For best results, sauté briefly in a pan with a little cooking spray and set aside.
  2. Marinate the Tofu: Cube the tofu and marinate in 1 tbsp of teriyaki sauce for 10-15 minutes.
  3. Cook the Tofu: Heat the sesame oil in a large pan and fry the tofu until golden. Remove and set aside.
  4. Sauté Garlic: In the same pan, add the minced garlic and sauté for about 30 seconds.
  5. Cook Vegetables: Add the carrot and bean sprouts, cooking for 2-3 minutes. Move the veggies to the side of the pan.
  6. Scramble the Eggs: Pour the beaten eggs into the pan and scramble lightly until they start to set.
  7. Combine Ingredients: Add the Skinny Pasta Fettuccine and cooked tofu back into the pan.
  8. Add Sauces: Mix in the soy sauce, teriyaki sauce, and chili sauce. Cook for another 2 minutes while stirring.
  9. Garnish: Top with green onion, cashews, and fresh cilantro.
