Teriyaki Tofu Pad Thai – Delicious, Nutritious, and Easy to Make!

Ingredients:
- 200g tofu, cut into cubes
- 1 pack of Skinny Pasta Fettuccine
- 2 beaten eggs
- 1 carrot, julienned
- 1 cup of bean sprouts
- 1 green onion, chopped
- 1-2 garlic cloves, minced
- 3 tbsp soy sauce
- 3 tbsp teriyaki sauce
- 1 tbsp sugar-free chili sauce
- 1 tbsp sesame oil
- A handful of fresh cilantro
- A handful of cashews
- Fresh ginger root
Instructions:
- Prepare the Skinny Pasta Fettuccine: Drain and rinse thoroughly with water. For best results, sauté briefly in a pan with a little cooking spray and set aside.
- Marinate the Tofu: Cube the tofu and marinate in 1 tbsp of teriyaki sauce for 10-15 minutes.
- Cook the Tofu: Heat the sesame oil in a large pan and fry the tofu until golden. Remove and set aside.
- Sauté Garlic: In the same pan, add the minced garlic and sauté for about 30 seconds.
- Cook Vegetables: Add the carrot and bean sprouts, cooking for 2-3 minutes. Move the veggies to the side of the pan.
- Scramble the Eggs: Pour the beaten eggs into the pan and scramble lightly until they start to set.
- Combine Ingredients: Add the Skinny Pasta Fettuccine and cooked tofu back into the pan.
- Add Sauces: Mix in the soy sauce, teriyaki sauce, and chili sauce. Cook for another 2 minutes while stirring.
- Garnish: Top with green onion, cashews, and fresh cilantro.
